Urban mushroom farming is the idea of incorporating mushroom farms into urban areas, which can reduce food waste and cut down on the city’s carbon footprint. Food waste, which otherwise would have released methane and leachate in landfills, can be utilized as growing substrates for edible species of mushrooms. To prove the effectiveness of mushrooms in recycling food waste, I created the KIS mushroom farm. Currently, the project is still in its infancy and is only limited to recycling coffee waste, but I plan to expand this project to recycle other forms of food waste as well. This farm has successfully recycled over 15 kg of coffee grounds and produced 3 kg of mushrooms which have been donated to teachers around the school.
